Shrimp Cocktail
This recipe is difficult for me to describe because I do not like seafood. I know, I know … but I can’t help it. Trust me… I’ve tried many forms of seafood and it all tastes like the smell of the ocean to me. blah!
This shrimp cocktail, however, is one of my husband’s favorites. It’s full of fresh ingredients and makes a great snack or appetizer.
My grandmother, mom and sister make this frequently because they say its so good.

1 Lb Tailless shrimp | |
1/4 small onion | |
1 Garlic clove cut in half | |
Garlic powder | |
Salt | |
1/2 Cucumber | |
2 Green onions | |
1 Tomato | |
1 Jalapeño | |
1/4 bunch Cilantro | |
1 Avocado | |
Splash of Lemon juice | |
1+ cup Clamato (spicy or plain) | |
1+ cup Shrimp broth |
Substitution and optional addition
1 + Cup Cocktail Sauce instead of Clamato | |
Tajin for rim of the glasses |
Directions

Get your shrimp on
First, take 4 glasses and put them in the freezer.
Boil the shrimp with at least 2 cups water, onion, garlic, and salt until it turns pink. Reserve all the broth. Peel and clean the shrimp then cut it up.
While the shrimp is cooking chop your cucumber, jalapeño, green onions and tomato into small pieces. Chop the cilantro. Peel and cut the avocado into bite size pieces.

Cocktails anyone?
In a medium bowl combine all the solid ingredients. Add broth and Clamato or Cocktail sauce with a sprinkle of garlic powder, salt and a splash of Lemon juice. Mix it up. This is a good time to taste it and make sure the flavors are balanced.
Take a chilled glass, wet the rim and dip it in tajin (if you choose to add this). Continue with other 3 glasses and divide the cocktail into all 4 glasses. Add enough broth to cover the veggies and shrimp.
