Arroz con pollo is rice with chicken. Frijoles are beans.

This recipe is the Mexican rice recipe with chicken or beans added to it to make a complete meal. It is an inexpensive dinner but a delicious one.

1 palm full per person Long grain rice ( I use Basmati)
4oz Canned tomatoes
Broth
Water
Salt to taste
1-2 Chicken breasts
2 Clove Garlic
1/2 Onion chopped
1tsp Cumin
Frozen mixed vegetables
1/4-1Cup Frozen mixed vegetables

Directions

Boil chicken with chopped onion and garlic for about 30 minutes. Let cool enough to chop it up into bite size pieces. Set aside. Blend the tomatoes with half the onion and 1 garlic clove. Make the rice like you would Mexican rice: Fry the rice until golden. Add chopped cooked chicken and cumin. Mix with the rice. Add the blended tomatoes with garlic and onion. Add broth, water until it covers the rice then and salt. Be careful not to oversalt. Taste the broth before adding more. Add your mixed vegetables at this time. I usually add about a cup for 4-5 servings. Cover the pan and cook until the rice is done adding more water or broth as needed until rice is tender. If using beans: First clean the beans ( go through them and take out any rocks) then rinse the beans and put them in a pot or instapot . I usually use about 1 cup uncooked beans for 3-4 people. Cook your beans.. in a pot add water, chopped onions and garlic (DO NOT add salt it hinders the cooking process) and boil at medium for a few hours until the beans are tender. Do not leave the beans, they will burn if they run out of water. Continue to add water as needed. If using an instapot put your clean beans, onion and garlic in the pot, add about 6 cups water and pressure cook for 45 minutes. I do not salt the beans, I do salt the meal after everything is combined and cooking. Add the beans to the rice the same way as you add the chicken. You can subtitle water and broth for the bean broth.
