Juevos Rancheros

Juevos Rancheros are a pretty popular and well known breakfast dish. I have seen them made in different ways but this recipe is the one I learned in 3rd grade that my family still makes to this day. It’s simple, easy and delicious.

Ingredients

Adjust Servings
Corn Tortilla
1 Egg
1can Chopped tomatoes
1/4 Yellow onion
1 Jalapeño
Salt
1/4cup Olive Oil

Directions

Make the salsa
Blend or chop and combine the tomatoes, onion, jalapeño and salt. Add the salsa to a small saucepan and turn the heat to low, letting it heat up slowly.
Mark as complete

Egg and Tortilla
In a small skillet, heat oil over medium high heat. Fry your tortillas one at a time and put on plates to serve. In the small skillet, fry your eggs how you like them and add salt. Place each egg on top of each tortilla and top with the salsa.

Notes

The number of eggs will depend on the number of people and how many each person wants.
