Migas is a simple breakfast that the kids love. Probably because its basically eating chips and salsa with scrambled eggs mixed in.

Ingredients

1/4 - 1/2cup olive oil
12 Corn tortillas
6-8 Eggs
Salt and Pepper
Salsa
2 Jalapeños
1/4 Yellow Onion
15 ozCan Tomatoes
Salt

Directions

Making the salsa
Blend your tomatoes and pour into a small saucepan. Chop the onion and jalapeño and add them to the tomatoes.Add salt to taste. Turn heat to low and let the salsa heat slowly stirring occasionally.
Meanwhile pour the oil in a large skillet and heat to medium high heat. Tear the tortillas in to 1 inch pieces. Put them in the oil and fry them until they are crispy. Turn the heat down to medium low. Remove most of the oil from the pan and push tortillas to the outside. Scramble eggs in a bowl and add to the center of the pan. As they begin to cook mix them with the tortillas. Season with salt and a little pepper. To serve scoop out the Migas then add the warm salsa over top.
