Red Enchilada Sauce
This sauce is used for enchiladas, chilaquiles, tamales… apparently a lot of different foods. It is a good staple to have in the freezer in case you have the urge to make one of these meals. The chilis have to soak overnight so definitely make it ahead of time.

8 - 10 New Mexican chilis | |
1 - 2 Chili pasilla | |
1 medium Onion | |
5 Garlic cloves | |
Salt to taste | |
1can Whole tomatoes | |
1 tsp Vinegar | |
Water |
Directions
1.
Soak the chilis over night. Pull the stems off the chilis and rinse out the seeds.
Blend the chilis with the tomatoes, onion, garlic, water, vinegar and salt. Blend until its a smooth sauce then strain it.
