Pico de Gallo
Pico de Gallo literally means “Roosters Beak” in Spanish.
A good Pico de Gallo is so good as a salsa with chips or on top of Arroz con Pollo or Arroz con frijoles. I like mine to be a little limey and slightly salty and it is so simple to make.

1/4 Yellow onion | |
4 Tomatoes | |
1 Jalapeño | |
1/2 Cilantro bunch | |
1/2 tsp Garlic powder | |
Salt | |
+ - 1 tsp Lime juice |
Directions

Lets make that rooster's beak
Chop up all the veggies making sure that the onions are chopped small (no one likes to bite into a big chunk of onion) and add to a medium sized bowl. Add salt, garlic powder and the lime juice. Mix this all together and taste a piece of tomato. Adjust to your taste. Remember the lime juice falls to the bottom so mix it up before serving each time.
