Green Chili

super easy

Green chili is good with chicken, beef or pork, in my opinion. This recipe is one my sister came up with using a beef roast and its a really good one. She cooks hers in a crock pot and that’s how this recipe is written. I personally use the instapot because I am impatient.

You can have green chili as a main dish with rice and shredded lettuce salad or you can make burritos. Burritos are always popular.

1med-large Roast
4-6 Roasted Ancho (Pasilla) chilis
1 medium onion
5 Garlic cloves
1.5tsp salt or to taste
1Tbsp dried oregano
2tsp flour
2cups beef broth

Prep the ingredients
Get your crock pot plugged in and ready. Take your Ancho chilis and if they are not toasted, toast them and peel them. Cut the tops off and remove the seeds. Slice the chilis into thinner sized strips. Take the equivalent of one chili and set aside for after the roast is cooked. Chop the onions into half inch pieces and reserve them with the sliced chilis. Chop the garlic and also set them aside with the onions.
Take the roast and place it in the crockpot. Dump in all of the ingredients minus the reserved chilis. Fill the crock pot with beef broth, water or both about 1/2 way up (don’t worry you’ll make thick sauce when it’s done) Cook on high for 4-6 hours. When it's done take out the roast and shred it. Before putting it back in add the flour and whisk to make the gravy/ sauce (wisk in flour 1 tsp at a time to thicken the juice). Add roast back in add the green chili that you put on the side and let it cook about another 20-30 min. Add extra salt to taste. Make sure you have tortillas for your burritos.
