Mexican Spaghetti/Sopa de Macaron

My grandmother would make this for me when I was a little older and I was crazy about it. I remember asking her if this was the Mexican version of Mac ‘n cheese. It’s so good and so different from Mac ‘n cheese. The noodles are tubular and not elbow and it’s cooked in a sopita like tomato sauce then covered with cheese. Mmmm it makes me hungry just thinking about it.

1Package Ziti pasta | |
Salt to taste | |
4oz Blended tomatoes | |
1/4Onion Chopped fine | |
1Large Garlic clove chopped | |
1/4Cup Water or Broth | |
Ranchero or Monterey Jack cheese |
Directions
1.
Boil pasta al dente. Combine the tomatoes, garlic, broth or water and onion in the blender. Put the cooked drained pasta in a large pan and pour the sauce over the top. Add salt to taste and let simmer for a few minutes so the pasta can absorb some of the tomato flavor. Sprinkle cheese all over the top.
