Chilaquiles

Chilaquiles always reminds me of Luke’s Diner in Gilmore Girls when Caesar is running the place he say… “Chilaquiles!” Makes me giggle.  Anyway this is a very common breakfast meal and I have seen it made a few different ways. Our way is with a red sauce and Mexican cheese. Give it a try, you might like it.

Ingredients

Adjust Servings
8 - 10 New Mexican chilis
1 - 2 Chili pasilla
1 medium onion
5 Garlic cloves
Can Whole tomatoes
Salt to taste
1 tsp Vinegar
Water as needed
12 approximately Corn tortillas
1 Block Queso fresco (a type of Mexican cheese)
Cooking oil

Directions

Make ahead of time
Soak your peppers overnight to soften them.
After the peppers are soaked clean the seeds out of them and blend the peppers with the tomatoes, onion, garlic, salt, vinegar and water.
Mark as complete

Assembly
In a large pan, add the oil and heat. Tear the tortillas into 1 inch pieces and add to the oil. Fry them until they are crispy. Drain the oil from the pan and carefully add the some of the sauce (it will splatter). You want enough sauce to coat all the tortilla pieces. Take it off the burner and sprinkle the queso fresco over the top. Reserve the rest of the sauce in the fridge or freezer for future use.
